Dinners: Cauliflower Potage

So simple, yet SO good.
Ingredients:

Cauliflower (Can be frozen, can also be mixed with broccoli)
Chicken Stock ( Canned or made yourself.)
Heavy Whipping Cream
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Optional:
Garlic
Onion Powder
Butter
La Costa Sliced Jalapenos with Carrots (Canned)

Have a slow cooker or a pressure cooker, or… hell, a big pot? Good.
Throw a bag of cauliflower, a can or two of chicken stock, and 1 whole small carton of heavy whipping cream in there.

Then add some garlic, onion powder, and 2 Tablespoons of butter.

Next, drain the sliced jalapenos and carrots, and then throw them in there as well. (Leave out to make a non-slighty-spicy version.)
Pressure cooker: High for 15 Minutes.
Slow Cooker: High for 2 Hours.
A Big Pot: Cover and let simmer for 30 minutes, or until cauliflower is cooked.

I garnished with cilantro. Mmmmmm…..

Snacks: Achiote Cream Cheese Dip

Ingredients:
Sazon Goya brand Con Culantro y Achiote
Garlic
Onion Powder
Cream Cheese
Ranch Dip Packet
Sour Cream

Firstly, make yourself some ranch dip with your packet and your sour cream. Make out about a 1/2 cup, and put the rest away for another day.

Mix 1 block of Cream Cheese, 1/2 a packet of Achiote, your seasonings (just not TOO much), and your 1/2 cup of Ranch dip.
(Pictured is double the recipe.)
Either use a food processor, or work your arm until it hurts badly, either method works fine.

Serve cold once it’s a nice thick cohesive dip.

Lunches: Egg Salad Lettuce Wraps

Ingredients for the egg salad:
6 Hard Boiled Eggs
1/2 Cup Mayo (More if needed)
1 Tablespoon Heavy Cream
1/2 Tablespoon White Vinegar
Chopped celery, red onion, carrots
Grated Cheddar Cheese (I would add this to-taste next time. They were good the way they were, but could have used a bit more “bite”.)

I did the laziest thing possible and just put them onto some beds of lettuce. Mmmm veggies~!
Those eggs are really filling!

Dinners: Salmon Keto Tacos

I used parmesan for these shells. Parmesan WANTS to burn, and it wants to burn fast. I highly recommend using this recipe for the shells instead:

Salmon, salsa verde, guacamole, sour cream, lettuce. So very filling.

Snacks: Gas Station Grub

Found these at a Circle K.
Roasted Almonds, Cracker Barrel cheddar cheese slice, and Xyience Cherry Lime no-carb energy drink.

Dinners: Ham

This is a ham.

Dinners: Spicy Chicken Thighs with Mayo

Ingredients:
Chicken
Hot Sauce
Sriracha
Seasoned Vinegar

Spray your baking sheet with non-stick spray.
Coat raw chicken thighs with Frank’s Red Hot sauce or any other hot sauce of your choosing.
Put into the oven at 375 for 30 minutes.
Remove from the oven and add stripes of sriracha (Rooster sauce).
Take 1 Tablespoon of Aji-Mirin or other sweetned or seasoned rice vinegar, and sprinkle over the top.
Put back into the oven at 375 for another 30 minutes.

Serve with mayo.

Dinners: Backyard Barbeque

Nothing beats late Spring / early Summer backyard barbeques. Nearly everything is keto-friendly.
Here I’ve snagged some beef ribs, sliced pork, shredded bbq pork, deviled eggs, and salad.
Oh man. Love it. I was a hog in heaven, I’ll tell you what.

Exercise: Weight Lifting

Weight Lifting and Keto go together like deli meats and cheeses.
The morning after a circuit on the free weights and the machines, 30 seconds for each exercise, as heavy as I could lift, I lost 2 pounds.
And kept it off. It wasn’t just water, which was amazing.

As you can see, I’m still pretty weak. But I can’t wait to go back for more~!
